Established in 1987, the Cavalleri Winery is a family company with tradition in growing grapes for the elaboration of good wines, a heritage received from their Italian ancestors. Originating from the north of Italy, the Cavalleri family settled down in vale dos Vinhedos in 1875. The family’s descendants, born for viniculture, are still personally dedicated to all of the processes involving in wine making.
Currently, the Cavalleri Winery has a production area of 30 hectares, which are distributed into some kinds of viniferous grapes. Responsible for the production of 200 thousands liters of white, red and sparkling wines per year, the Cavalleri presents some differentials in the elaboration of its products. The company makes small works of fermentation in order to diminish the acidity of the wine, extracting superior amounts of tannin, providing a better structure and aromatic complexity. Another practice very common applied by the Winery is to increase the extract-liquid ration, through the immediate withdrawal of approximately 15% of the liquid after the crushing, improving the secondary quantity of tannin and aromas, making the body more accentuated.
Main Products
Among Sparkling wines and wines from Cavalleri Winery that had received awards, there are the Sparking Moscatel and the Chardonnay. The Sparkling one possesses aromas of great fineness, as citric and some floral ones. Its sweetness confers balance, with fine flavors of ripe fruits. The fermentation of Chardonnay, the fine white wine, occurs in barrels of oak, it presents coloration yellow-straw. It has acidity harmonized with subtle aromas.
